Ingredients

  • Sliced avocados, for serving
  • 2 bay leaves
  • 12 ounces dark or light beer (or substitute chicken stock)
  • 1 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons chili powder
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon minced garlic (about 6 cloves)
  • 2 green bell peppers, seeded and chopped
  • 2 tablespoons ground cumin
  • 2 jalapeno peppers, seeded and finely chopped
  • 1, 15-ounce can dark kidney beans, rinsed
  • 2 teaspoons kosher salt
  • 1 pound lean ground beef (between 90/10 95/5 beef-to-fat ratio)
  • 3 tablespoons lime juice (about 2 limes)
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 1, 15-ounce can black beans, rinsed
  • 1, 15-ounce can white beans, rinsed
  • 1 red bell pepper, seeded and chopped
  • Reduced fat sour cream (or plain Greek yogurt), for serving
  • Shredded cheese, for serving
  • 1 tablespoon smoked paprika
  • 2, 15-ounce cans diced tomatoes with green chilis
  • 2 large yellow onions, chopped

Instructions

  1. In a large Dutch oven or stockpot, brown ground beef with salt and pepper, breaking apart the meat and stirring occasionally until fully cooked, about 5 minutes
  2. Transfer to a plate lined with paper towels
  3. Blot dry and set aside.Reduce heat to medium and add olive oil to the pot
  4. Add onions, bell peppers, and jalapenos
  5. Cook, stirring frequently, until onions are golden brown, 10 to 15 minutes
  6. Add garlic, cumin, chili powder, smoked paprika, chipotle chili powder, oregano, and cayenne
  7. Stir and heat for 2 minutes.Add beer, scraping up any browned bits from the pot and simmer 3 minutes
  8. Add diced tomatoes (undrained), bay leaves, black beans, kidney beans, white beans, and reserved beef
  9. Cover and simmer gently, stirring occasionally, until chili thickens, 30 to 45 minutes.Remove bay leaves
  10. Stir in lime juice
  11. Serve garnished with shredded cheese, avocado slices, and sour cream (or plain Greek yogurt).
