  • ¾ cup of asparagus, cut into bite-size pieces
  • ½ cup of egg substitute
  • 2 eggs
  • ¼ cup of low fat mozzarella cheese, shredded
  • ¼ cup of sliced purple onions
  • ¼ cup of red bell pepper, cut into bite size pieces
  • salt and pepper to taste
  • 1 cup of sliced leftover lean steak


  1. Preheat oven to 350 degrees.Saute asparagus, red pepper and onion in a medium skillet over medium high heat until tender using a cooking spray.Add steak pieces and heat, remove from heat.Place the meat and veggies in the bottom of a casserole dish.In a medium mixing bowl, beat eggs and the egg substitute, add salt and pepper according to your taste.Pour the egg mixture over the veggies and steakBake in the preheated oven for 50 minutes until knife inserted comes out cleanTop with cheese and bake for 3 minutes or until cheese is just melted
