  • 1 apple, cored and chopped
  • 1 stalk of celery, chopped
  • ½ tsp dried parsley
  • 1 hard boiled egg, peeled and chopped not too small
  • ½ tbsp Extra virgin olive oil
  • ½ tbsp local honey (optional if you don't want to add it)
  • 1 tbsp fresh lemon juice
  • salt and pepper to taste
  • 1 can of cooked tiny shrimp (wild caught is best) 4 oz


  1. Mix everything in a large bowl.Refrigerate for at least an hour before eating.Serve or mixed greens if you are paleo.If not, you can serve in a pita or in a sandwich wrap.
