  • ¼ cup butter
  • 2 Tbs mini chocolate chips
  • 1 cup crispy rice cereal
  • ¼ cup honey
  • 2 cups quick cooking oats (not rolled oats)
  • ½ tsp vanilla


  1. Stir oats and rice cereal together
  2. Set aside
  3. Over medium heat, melt butter, honey and brown sugar together
  4. Once it starts to bubble, reduce heat, and cook for 2 minutes
  5. Stir in vanilla
  6. Pour syrup over the oat mixture
  7. Stir until well coated
  8. Pat into a greased sheet pan
  9. Mine were about ½ in thick
  10. Thoroughly press them together, or they will crumble when you cut into them
  11. Sprinkle chocolate chips evenly across the bars
  12. Lightly press in the chips
  13. Allow to cool for at least 2 hours
  14. Cut into bars, store in air tight container at room temperature.
