  • 2/3 cup brown or French lentils
  • 1 carrot, chopped
  • Cayenne pepper, to taste
  • 1 pre-cooked chicken sausage link, chopped into small pieces
  • 2 cups of water plus 1 chicken boullion cube, or 1 can of chicken broth plus 1 cup of water
  • 4 cloves garlic, finely chopped
  • Garlic powder, to taste
  • Juice from one lemon
  • Olive oil
  • 1 medium onion, chopped
  • Salt, to taste
  • 1 tomato, chopped
  • 2 cups water


  1. In a large saucepan over medium heat, sauté onion and carrots in olive oil for about three minutes
  2. Add garlic and cook for an additional 30 seconds or so
  3. Add two cups of water and lentils
  4. Cook for about 15 minutes, or until lentils are tender
  5. Add a bit more water if the pan goes dry before lentils are fully cooked.Add additional water and boullion cubes (or chicken broth)
  6. Add sausage, lemon juice, tomato, and spices
  7. Simmer for five minutes or longer, until ready to serve
  8. Top with chopped scallions and tomatoes, if desired.
