Ingredients

  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/3 cup brown sugar
  • 1/2 cup butter, softened
  • 2/3 cup Heath coffee creamer
  • 1 egg
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 2/3 cup strong brewed coffee, cooled
  • 1/3 cup sugar
  • 3/4 cup Heath toffee bits (chocolate covered bits)
  • 1 teaspoon vanilla

Instructions

  1. In a large mixing bowl, beat the butter, sugars, and vanilla until creamy
  2. Add the egg and cream again
  3. Sift together the baking powder, baking soda, salt, and flour
  4. Stir together the coffee and creamer
  5. Alternately add the flour and coffee mixture to the creamed butter until everything is incorporated
  6. Do not over mix.Divide the batter into 15 lined muffin cups
  7. Bake at 400* for 20 minutes
  8. Let cool in the pan for 2 minutes until removing them to a wire rack to cool completely
  9. Store in a sealed container on the counter for 4-5 days
  10. Makes 15 muffins.
