Ingredients

  • ¼ cup sliced almonds
  • 1 avocado, diced
  • 2 Tbs Pompeian Balsamic Vinegar
  • 1 Tbs Pompeian Extra Virgin Olive Oil
  • 1 Tbs fresh basil, finely chopped
  • ½ tsp olive oil
  • ¼ cup feta or shaved Parmesan, optional
  • ¼ cup red onion, diced
  • 1 roma tomato, diced
  • 1 heart of romaine lettuce, halved
  • Salt and Pepper to taste

Instructions

  1. Preheat grill to high.To prepare the vinaigrette combine balsamic vinegar, 1 Tbls olive oil, and fresh basil
  2. Whisk until well combined
  3. Season with salt and pepper.Brush ½ tsp olive oil onto the cut side of the lettuce.Place on grill cut side down, grill for 1-2 minutes, until slightly charred.Remove from grill and top with onion, tomato, avocado, almonds, and cheese if using.Top with the prepared vinaigrette to serve.
