  • 1 cup sliced mushrooms
  • 1-2 tablespoons olive oil
  • 1 onion, thinly sliced
  • salt and pepper
  • 1-2 cups shredded cheese (cheddar or Monterey Jack)
  • 4-6 whole wheat tortillas
  • 1 zucchini, sliced into spears


  1. Toss zucchini, onion and mushrooms with oil, and sprinkle with salt and pepper (or seasoning salt)
  2. Set aside in bowl
  3. Fire up the grill
  4. Using a vegetable grill basket, spray grill basket with oil and place on grill to heat up for about 3 minutes
  5. Once grill basket is hot, pour in the vegetables
  6. Cook in basket, turning frequently for 7-10 minutes or until soft and cooked through
  7. Remove from grill pan and put back into original bowl
  8. Spray one side of tortilla with oil and place directly on grill (or electric griddle) and top generously with cheese, then place about 1 cup of grilled vegetables evenly over
  9. Top with another tortilla
  10. After cheese starts to melt, turn over quesadilla for a few more minutes
  11. Remove from grill, slice into 6 triangles and serve.
