Ingredients

  • 1 Tbs anchovy paste -optional
  • 1 tsp black pepper
  • 2 cloves garlic - grated
  • ¼ c lemon juice
  • 8 c lettuce (I used organic mixed greens)
  • 2 Tbs olive oil
  • ¼ c parmigiano reggiano - grated

Instructions

  1. In the bottom of a salad bowl, whisk together parmigiano reggiano, garlic, lemon juice, anchovy paste and black pepper.Slowly drizzle in olive oil and continue whisking to create dressing.Add greens of choice and serve with extra shaved parmigiano reggiano.
