  • 1 teaspoon baking soda
  • 2 teaspoons cornstarch
  • 3/4 cup dark brown sugar
  • 1 large egg, at room temperature
  • 2 cups all-purpose flour
  • 1 tablespoon milk
  • 2 cups powdered sugar
  • 1/2 teaspoon salt
  • 1 1/4 cup semi-sweet chocolate chips
  • 1/4 cup sugar
  • 3/4 cup unsalted butter, softened to room temperature
  • 1 teaspoon vanilla
  • 2 teaspoons vanilla extract


  1. Preheat oven to 350 degrees and line a 9" square pan (or your preferred pan) with parchment paper.In a large bowl cream the butter and sugars together on medium speed until fluffy and light in color
  2. Mix in egg and vanilla until combined.In a separate bowl, combine flour, cornstarch, baking soda and salt
  3. On low speed, slowly mix into the wet ingredients
  4. Dough will be thick and look like it's not coming together but it will
  5. Stir in chocolate chips.Press dough into prepared pan and bake for 16-20 minutes or until the edges just start to turn brown
  6. Let cookie cool completely in pan.Frost with buttercream if desired.In a large bowl, cream together the butter, and vanilla
  7. Blend in the sugar, one cup at a time, beating well after each addition
  8. Beat in the milk, and continue mixing until light and fluffy
  9. Keep icing covered until ready to decorate.Using a large star tip decorate the cooled cookie cake.
