Ingredients

  • 2 cups apples, peeled and diced (I used Gala)
  • 2 tsp baking powder
  • Bread
  • ½ cup brown sugar
  • ½ cup butter, softened
  • 3 Tbs butter
  • ¾ cup chocolate chips
  • 1 tsp cinnamon
  • 2 eggs
  • 2 cups flour
  • ½ tsp salt
  • ½ cup sugar
  • 1 tsp vanilla
  • Struesel

Instructions

  1. Preheat oven to 350 degrees
  2. Grease the bottom and sides of a 9x5 inch loaf pan.In the bowl for an electric mixer, beat the butter and both sugars together until well combined
  3. Pour in the buttermilk and baking powder, mix until fully incorporated
  4. Add eggs and vanilla, mix well
  5. Slowly add flour, cinnamon and salt
  6. Stir until well combined.In a separate bowl mix the apples with a little flour (helps to make sure they don't sink to the bottom)
  7. Using a spatula, fold them into the batter
  8. Pour into prepared baking dish.To make the streusel combine the flour, brown sugar and cinnamon in a small bowl
  9. Using your fingers mix in the butter until it is the texture of coarse sand, it may take a couple minutes
  10. Stir in the chocolate chips
  11. Sprinkle over the top of the batter
  12. Bake for 60-75 minutes or until a tester comes out clean
  13. Allow to cool completely before slicing (trust me on this)!
